CLAUDETTE’S KITCHEN- ALL STAR SALAD

Let the summer fun begin with this All Star Line up! With the ‘dog days’ of summer approaching, this delicious summer salad comes in handy. Create a vibrant healthy bowl using fresh greens and veggies. I’ve dedicated the name All Star Salad to this dish because so many ingredients are key MVPs! Sports may be cancelled this summer, but you still have this chance to bring some All Stars into your home! This star studded salad consists of:

• 1 lb of cherry tomatoes cut in half.
• 3 cooked cobs of corn, crumbled off of the cob.
• 2 avocados peeled and pitted, then sliced. (Make sure they’re not too ripe)
• 1/2 of a medium red onion sliced thin.
• 1/2 bunch of chopped cilantro.
• 2 cloves of garlic pressed.
• 2-3 tablespoons of lime juice.
• 2 tablespoons of good extra virgin olive oil.
• 1 teaspoon of sea salt.
• & pinch of black pepper.

You can cook the corn by boiling, baking, or grilling. I choose to boil mine! Make sure to use the full cloves of garlic, it seems like a lot but it gives it an irresistible flavor. Be sure to enjoy this salad that is packed with vitamins and nutrients! Feel free to add your choice of fish or meat.
