CLAUDETTE'S KITCHEN - NOT YOUR AVERAGE POTATO SALAD

Did you know that in 1995 the first vegetable to be grown in space was a spud!? The Potato is a starchy, tuberous root vegetable, cropped from the subspecies of the perennial plant solanum tuberosum of the solanaceae. Potatoes are the most widely grown tubular crop, and the fourth largest fresh food produce.


Potatoes come in a large range of colors from alabaster-white, yellow and deep purple and so many other shapes, textures and sizes. These babies inspire inventive chefs to create new mouth-watering and eye-catching plates.
Potato salad is a dish made from boiled potatoes. The choice of various kinds and colors are completely up to you to decide. The salad is considered a side dish and can be found at almost every backyard summer cookout. It has a creamy, and tangy flavor notes with some added crunch from the sweet relish and the red onion. This is a summer must-have at my house!

Ingredients
1. 2 1/2 lbs of baby mixed potatoes.
2. 3/4 cups of mayo
3. 1 tablespoon of salt for cooking the potatoes
4. 1/2 cup of sweet relish
5. 1 medium red onion chopped.

Directions
In a large pot of boiling water with salt added, add the washed potatoes. Cook for around 15 minutes, let potatoes cool. Cut them into quarters in a large bowl. Add mayo, relish and onion then mix well. This dish can be served cold or at room temperature. Enjoy!
