CLAUDETTE’S KITCHEN- RASTA PASTA

Rasta Pasta is a dish made with a variety of bell peppers (red, green, and yellow), creamy sauce and lots of Jamaican seasoning. This dish was inspired from an original Italian recipe, but is pushed to the next level by all the traditional Jamaican ingredients. Rasta is the abbreviation for “Rastafarianism” a social movement
developed in Jamaica in the 1930’s. We all are familiar with the most well known Rastafarian, Bob Marley. I’m sure that we all mentally sing the words to his famous song “One loveeee..”, no? Ok, maybe just me!

All that being said, Rasta Pasta is not in any way associated with Rastafarian culture, because Rastafarians do not consume meat or dairy as a part of their diet. Regardless, this dish can be made to suit any dietary lifestyle. Vegan, vegetarian, pescatarian, no problem! Feel free to substitute any of these ingredients for one that works better for you, either way it will taste amazing.

Ingredients for the dish
• 1 lb penne pasta (follow directions for cooking on box)
• 1 1/2 lbs shrimps peeled, deveined, and cooked.
• 2 tablespoon of Jerk seasoning.
• 1/4 cup of olive oil.
• 1 medium red, green, and yellow of each peppers.
• 4 cloves of garlic.
• 1 1/2 cup of heavy cream.
• 1/2 cup of parmesan cheese.
• 2 stalks of green onion.

 

Directions

  • Slice peppers, crush garlic. Coat shrimp with 1 tablespoon of Jerk seasoning. Cook the shrimp in a skillet with olive oil over medium heat. Cook for 2 minutes on each side.
  • Remove from the skillet from heat and set aside.
  • Deglaze the pan by adding 1/4 cup pasta water, add peppers, green onion and garlic to the skillet and cook for about 5 minutes.
  • Add heavy cream, the remaining jerk seasoning and simmer for about 3 minutes.
  • Add pasta and parmesan cheese, stir until coated and lastly add the shrimp back to the skillet and combine with ingredients. Remove from heat and serve!
