Claudette's Kitchen- Ambrosia Salad

Do you know what an Ambrosia Salad is?

Ambrosia Salad, according to Greek mythology, was known as “the food of the Gods”. It became popular in the U.S as early as the Nineteenth century, making its first appearances in cookbooks. Although its origin is not entirely clear, many consider it to be a Southern dish.

I personally became acquainted with the dish when at my husband’s elderly aunt’s home in the Catskills. Initially when served the Ambrosia Salad my first reaction was “what kind of hot mess is this?!”. Miracle whip and canned fruit galore, yuck! Upon tasting it I had been so very wrong, it actually turned out to be delicious! Fast forward years later I regularly make this old fashioned treat, but now with a modern twist.

This recipe calls for:
1 pineapple-cut up into chunks
1-fresh kiwi- cut up into chunks
1- mango- cut up into chunks
1 1/2 cup of shredded coconut
1 1/2 cup of sour cream
1 1/2 cup of fresh whip cream
1 cup of Granny Smith apple
1 cup of grapes

You’re going to mix all of the above items together and refrigerate at least 2 hours prior to serving.
When you’re ready to serve bring together:
2 large oranges
1/2 cup maraschino cherries
1/2 cup of chopped almonds
Handful of mini marshmallows

These last ingredients will act as the decorative toppings for the dish.
With the warm weather ahead this will be the perfect, cool summer afternoon treat. Feel free to add your own flare to the recipe by adding in some of your favorite fresh fruits. Feel even more free to use the remaining pieces of fruit as a side rim decor to your cocktail!
