Did you know that beets are one of the coolest vegetables? Beets can be beneficial to the body in many ways. Their purposes range from curing hangovers, eliminating head dandruff, making a delicious additive to port wine, and even serve as a love potion to make the heart grow fonder A.K.A an aphrodisiac. Even astronauts know how out of this world beets can be being that they’re often a snack of choice.

There’s a saying I am sure that we all know, that there is a thin line between love and hate. Beets fit that saying because usually you either really passionately embrace them or passionately hate them. Dwight Shrute, the devoted beet farmer from the hit TV series, The Office, seems to fully embrace them. Since we’re all pretty much still being quarantined I’m sure we’ve been

introduced to his character, right?

Most of us are familiar with red beets, but there are countless varieties of beets each with its own special flavor and nutrients. There are golden yellow, white, scarlet red, and “candy corn” pink and white striped beet varieties. Beets are edible from the roots to the leaves. The leaves can be steamed and eaten like spinach and the roots can be roasted and cooked.

Here is a recipe I like to make a bushy beet salad.
Make sure to wash and clean the beets! Roast for 1 hour and 10 minutes at 400 degrees. Let them cool, then peel and slice or make wedges. Add 1/4 cup of olive oil. 1/2 teaspoon of sea or kosher salt. 1/2 cup of crumbled goat cheese to garnish. Add fresh cilantro or parsley and enjoy!
